This is not a true low calorie dressing, but an easy and healthy dressing, so use in
moderation. Of course, we know that the avocado and olive oil are healthy fats.
1 ripe avocado
1/4 cup fresh lemon juice
1/2 cup olive oil
1 clove garlic
1 t. sugar or you may substitute honey or stevia
3/4 t. salt
1/2 t. dry mustard
Cut up avocado into blender jar or food processor; add lemon juice, sweetener, salt, dry mustard and garlic. Blend until smooth. If you do not have a blender, mash the avocado until smooth and immediately stir in lemon juice. Place in pint jar with a tight fitting lid. Add oil, sweetener, salt and mustard. Cover and shake well.
Mix with any type of salad greens and ENJOY!
Serves 8 with 240 calories per serving.
