I have found that I really have been enjoying all kinds of greens this winter andfound this recipe for kale and really loved it. TRY IT, YOU MIGHT LIKE IT!
1 T. plus 1 t. extra virgin olive oil
1-1/2 pounds kale with ribs removed and coarsely chopped
2 cloves garlic, minced
1/4 t. crushed red pepper
Heat 1 T. oil in dutch oven (I used large frying pan) over medium heat. Add kale and cook, tossing until bright green, about 1 minute. Add water, reduce heat to medium low, cover and cook, stirring occasionally until kale is tender—approx. 12 to 15 minutes. Push kale to one side, add the remaining 1 t. oil to the empty side and cook garlic and crushed red pepper until fragrant, 30 seconds to 1 minute. Remove from heat, stir in vinegar and salt to taste.
