At this time of year, a lot of us have leftover chicken and turkey and this salad is not only really good, but pretty healthy. If you are a vegetarian, tofuturkey can also work.
1/2 cup chopped peans or walnuts
1 cup low fat mayo or use 1/2 cup greek yogurt with 1/2 cup mayo
2 T. sugar
2 T. cider vinegar
4 cups leftover meat or tofu item
2 cups finely chopped fresh broccoli
1/2 cup diced red onion
1/2 cup dried cranberries
1/3 cup chopped cooked turkey or soy bacon
salt and pepper to taste
Roast nuts in shallow pan in 350 degree oven for 8 to 10 minutes.
Whisk together mayo, sugar and vinegar in a large bowl. Stir in chosen meat or
tofu item, nuts, broccoli, onion and cranberries. Add salt and pepper to taste.
Sprinkle with bacon before serving and ENJOY!
