I actually read today that you either LOVE or HATE cilantro and this can actually be connected to your DNA. Don’t know all the details, but see how you feel about this different take on the regular pesto.
1 cup walnut pieces
2 cups cilantro leaves, washed, drained and stemmed
1 green jalapeno, seeded and chopped
salt to taste
2 Tablespoons cider vinegar
Put walnuts in a food processor and grind until fine.
Add the cilantro, jalapeno pepper, salt, vinegar and 2 or 3 Tablespoons of water and blend. Add and blend in a little more water, if necessary to make a thick sauce. Taste and correct seasoning, if needed.
Use as a dip or garnish.
