I love to try new homemade salad dressings. For me, it is hard to find a really good, healthy “store bought” salad dressing. Let me know if you like this one. This can be used on a salad or over roasted or baked potatoes.
1 cup buttermilk
8 ounces low fat sour cream
1/2 cup light mayonnaise
2/3 cup packed fresh dill
11/2 Tablespoons fresh lemon juice
1/2 medium shallot
1/2 t. salt
freshly ground pepper to taste.
Put all ingredients into a blender jar in order listed. Run on High for about 45 seconds until smooth. Can be used immediately, but for the best flavor, allow to rest for at least 30 minutes so that flavors have the chance to blend and develop.
Dressing will last up to a week in the refrigerator.
