I just made this for my lunch today with a grilled cheese sandwich and find it so refreshing. Many of you have tomatoes, basil and cucumbers in your garden now and this is a great way to use them.
6 medium vine ripe tomatoes, cut in quarters
1 cup fresh basil
1/4 cup apple cider vinegar
1/4 cup olive oil
1 teaspoon soy sauce
2 cloves garlic
1 cucumber, chopped
1/2 red or green bell pepper
1/2 teaspoon cayenne pepper (adjust to your taste)
salt and freshly ground pepper to taste
Place all ingredients in a food processor or blender and blend until desired consistency. Serve well chilled. ENJOY!
