Halibut with Zucchini, Artichokes and Tomatoes
This dish is quick, simple and very tasty.
1 6 ounce jar marinated artichoke hearts
2 3-ounce halibut (or fish of your choice) filets
8 ounces plum tomatoes, chopped
1 zucchini cut in rounds
3 T. chopped fresh basil
2 cloves garlic
3/4 bottle clam juice
Preheat oven to 475 degrees. Drain marinade from artichokes into a 9 inch diameter glass pie dish. Add fish; turn to coat with marinade. Sprinkle fish with salt and pepper. Scatter artichokes, tomatoes, zucchini, basil and garlic around fish. Pour clam juice over the fish and back until fish is just opaque in the center–about 20 minutes. Serves 2.
