I am hearing a lot about the benefits of mushrooms these days, so here is another mushroom recipe to try.
1 pound white button mushrooms, sliced
3 T. fresh lemon juice
2 T. olive oil
2 T. chopped fresh parsley
2 T. chopped fresh dill
2 T. chopped chives
Salt and pepper to taste.
Toss mushrooms with lemon juice, olive oil, parsley, dill and chives, in a bowl. Season with salt and pepper.
Serves 4, approx. 100 calories per serving.
