1 13-oz. can chunk chicken breast, drained.
1/2 rib chopped celery
1 T. chopped walnuts
1 T. Craisins
10 seedless grapes, halved
2 T. light mayonnaise or Veganaise
2 T. slivered almonds
Combine above ingredients, except slivered almonds, in mixing bowl. Line plate with romaine lettuce leaves, put generous portion of salad on lettuce and top with almonds. Serve with crackers
of your choice.
Of course, you may adjust ingredients according to your taste.
