4 large potatoes cut into 1/2″ pieces
1 green or red bell pepper
1 red onion, thinly sliced
2 t. olive oil
1/12 t. seasoned salt
1 t. ground black pepper
1/2 t. garlic powder (optional)
Preheat oven to 425 degrees. Coat a large baking dish with nonstick spray. Toss the potatoes, pepper, onion, oil, salt black pepper and garlic powder in the pan until well coated. Bake, stirring occasionally for 35 to 40 minutes or until potatoes are tender and golden.
