The following recipe is easy, healthy and can be eaten hot or cold.
3 pounds chicken pieces of your choice
1-1/2 teaspoons seasoned salt
1/2 teaspoon black pepper
Place chicken in a resealable plastic bag. Add salt, and pepper and shake to coat the pieces. Squeeze juice from lemon and add it to the chicken. Toss to coat. Seal the bag and refrigerate overnight to marinate.
Preheat oven to 325 degrees. Place chicken in a large nonstick baking dish and cook approx. 1 hour or until juices run clear.
Makes 4 servings at 269 calories each.
